Egg white can be used instead, but if it has to be in powder form, I'm sure it can be dried in a beaker then ground in a mortar & pestle if necessary. Also, dried egg white may be available from some supermarkets or health food shops.

Hi All
I have been looking for the powdered egg, and have not found any to buy, although I have bought a pavlova magic egg, do you know where the powdered albumin is available from? I also have just bought a 15g jar of junket from the health food shop, and it is pretty expensive $9.95!!, so I hope it get used sparingly
cheers Lisa
