protein solution for food tests

Hi,

We are about to do a prac exam for yr8 using food tests :boring: , the teachers want an 'unknown solution' for the kids to test and they want that to be protein and starch solution. What would you be using as the protein solution, I was thinking about peptone, but I am not sure it would work as protein gets broken down by pepsin into protein, not sure if it is actually protein them :? What would you recommend using as a protein solution?

Hi Sassi,
You could use egg white. Try mixing with a little water.

Hi Sassi,
we use peptone as protein. It is easier than egg white and last longer. just make sure you use very weak solution. Tip of a spatula in 50ml water.

I always use gelatine. It don't stink like egg!!

I've always used Geletin in class then egg white for prac exams, you buy one of thoes egg shaped plastic pavlove mix things from supermarket no mess no fuss no smell

Yes it sets but only when in the fridge. It melts at about 30 degrees hence you cannot use gelatine as a substitute for agar.....ends up being a nasty smelly mess.

Hi Sassi, you don't use anywhere near the amount of gelatin as for jelly, but it's still a giveaway in a prac exam as it goes gluggy, and if you leave aq week and take the lid off you need a gas mask!

Also for the starch, I like to use water that I have boiled a bit of rice in, works so much better than the cornflour they sent me when I ordered starch last time.
