What is the recipe for making up maltose (1%) or do I just dissolve in water?

Yes. Although 1% maltose is almost saturated 20°C, so a little heat may be needed to encorage disolution.

For every 100mL you want, disolve 1g maltose in about 80-90mL of hot water (50°C), allow to cool and then dilute up to final volume.

Adjust weight and volume to suit; so 2.5g in 200mL hot water to make 250mL, etc.
