Food Testing and Gelatine Solution

Post by Narelle01 »

I have been asked for gelatine solution for a food testing prac (for yr 7's)

I am just going to add a teaspoon to about 400mls of water.

How would it be used?

Testing for protein with CuSO4 and NaOH. You will need to heat the water as it will not dissolve in cold water.

If I get asked for egg and cannot get to shops, gelatine wins everytime. Dont even tell the kids, they just think its the egg white.
Works well.

That is good to know! We use the pavlova magic as our protien sample. I am sure gelatine is so much cheaper!

Tofu also makes an eggcelent substitute. It contains a fairly high amount of colagulated protien.
